When a walk-in fails, you are not waiting on a repair β you are watching inventory. That single difference is why commercial refrigeration is handled differently from domestic work, from the first phone call onward.

Tell us what the unit is reading against what it is set to, whether the compressor is running, and whether there is visible ice on the evaporator. Those three answers usually decide which parts come out on the first visit.
Kitchen air carries grease. It lands on condenser coils and traps dust into a mat that airflow alone will never shift. The unit loses its ability to reject heat, runs continuously, and the compressor eventually pays for it.
This is the single most common cause of commercial refrigeration failure we attend, and the one most completely preventable. A domestic fridge needs its coils cleaned twice a year; a unit sitting in a working kitchen with fryers needs it monthly.
The second most common is the door. Commercial doors open hundreds of times a day, so gaskets compress, tear and stop sealing far faster than domestic ones. A failing gasket on a walk-in runs the compressor continuously and ices the evaporator β two symptoms that look like a system fault and are not.

That last row is the one worth acting on. A unit moving from 36Β°F to 39Β°F across ten days is a repairable fault found early. The same unit discovered at 50Β°F on a Monday morning is a full inventory loss plus a repair.
The best schedule is the one that survives a busy service. This one fits into closing routines rather than requiring a separate visit.
Daily. Record the temperature of every unit at the same time each day. Check doors close and latch fully. Move stock away from the evaporator.
Monthly. Inspect gaskets for tears and hardening β the paper test works here too. Check condensate drains are clear. Look for ice on the evaporator.
Quarterly, or monthly in a heavy kitchen. Clean condenser coils properly. Check fan motors and blades. Confirm defrost is cycling as it should.
The temperature log is the most valuable item on that list and the one most often skipped. It converts a gradual fault into something visible before it becomes an emergency, and it is also the record a health inspector will ask for.
